It's been a crazy week here in Vegas! After thunderstorms and floods, we had a few of the most beautiful days yet. Almost feels like spring! And what better to celebrate than a trip to the Springs Preserve to check out the Butterfly Habitat. A fun little outing with my step daughter and friends. (aka "framily") Here are some fun pics to check out. I also found some pics I took 10 years ago of a buttery release that I did with my step kids. If you ever have a chance, I highly recommend getting your own butterfly kit. Comes with everything you need to raise your own butterflies. Makes for a great experience with your little ones. (Can't believe how tiny my babies were!) Butterflies are one of my favorite little creatures, what a fitting post for "Transformation Tuesday". I found a quote by Maya Angelou recently that sums it up nicely...
“We delight in the beauty of the butterfly, but rarely admit the changes it has gone through to achieve that beauty.”
I also have an amazing recipe to share with you that I created in my Finding Faith test kitchen. I have ALWAYS loved crepes. I use to make them ALL the time when I was a teenager. I use to use canned cherry pie filling and whipped cream, here I have made it a clean eats alternative. One savory and one sweet. I even used fresh eggs that I get from my neighbors chickens.

Crepes: 1/4 c Brown rice flour, 4 Egg whites, Water 1/2 c, pinch of sea Salt (Add Stevia for sweet). Filing for sweet is 1 c mixed berries, I like to warm them up and add stevia. Then I mixed together a little cake batter flavored protein powder with water and mixed some in with berries and added it on top.
Filling for savory: chicken and broccoli, with yogurt sauce, which consists of 1/2 c Greek yogurt, a little Dill, White pepper, Mint, Turmeric, Onion powder, Garlic powder, Pinch of sea salt, Spice up with tapatio if you like spicy.
The key to crepes is to get the pan nice and hot, spray with cooking spray, pour a 1/4 c mixture into pan and quickly rotate the pan to coat, turn down to low until it starts lifting (doesn't take long) and flip with a spatula. Or, if you are REAL adventurous, flip it right in the pan with a flick of the wrist (fun to try).
