So here are the turkey muffins I am absolutely addicted too...they have saved my life on many occasions...Once again I was distracted...I need to set up the tri-pod differently but I taped this while I was starving so I just wanted to get done! hahaha
I eat these hot and I eat them cold...They are typically my third meal of the day with 1 cup of green beans. You will often find me stuffing my face with one of the these in the parking lot of the gym..haha I will usually keep 2 or 3 in the fridge and the rest in the freezer as I start to run out I take 2 to 3 more out of the freezer and place in fridge. I think the chipotle makes them delicious...I would definitely invest! If you are wondering where some of the spices are you can watch my EAT CLEAN: My Spices Video.

  1. Looks delicious! I will try these. I love turkey and this so creative as a snack, lunch or if served with green beans, rice or potatoes, would make a quick dinner meal as well.

  4. YUM! I just made these and am so happy I found you through Pinterest! I had ground turkey in my freezer and just threw in a bunch of peppers and spices I had at home (including cumin & chili powder), topped them with red pepper flakes and minced garlic and they are fantastic!! I love that you can throw just about anything in them and have a great, quick and easy meal with tons of flavor (and no added salt)! Thanks again!

  6. I just entered this recipe into my calorie counting and noticed it came to about 112 without the eggs or oats... I realized the ground turkey alone is over 100 calories per muffin if you use 2 packages. Why does your calorie count say a lower number?

  7. Hey Michelle! Everyone's might be a little different if you are not weighing each turkey muffin, since I am on a competition diet I weigh everything! Here is the exact recipe with the calories..I do not use oats because I am on a competition diet and I use EXTRA lean turkey and egg whites... I would say mine weigh about 3 to 4 ounces..again I do not in mine use any oats! Hope this helps!

    Serving size 2 muffins for women
    2 lbs ground turkey (or chicken)
    3 egg whites
    1 cup quick cooking oats
    1/2 tsp ground cumin
    1/2 tsp dried thyme
    2 tsp dry yellow mustard
    2 tsp black pepper
    2 tsp chipotle pepper spice
    1 tsp salt
    2 tbsp garlic powder (2 cloves minced)
    1 small onion (finely chopped)
    2 celery stalks (finely chopped)
